Global Japanese Sai Chef Knife SAI-01 (Yoshikin)
The Global Sai Chef's Knife handles a wide range of cutting tasks, from finely chopping to dicing and slicing paper-thin, to mincing garlic, dicing celery, slicing tomatoes and more. Global Sai Knives follow the same tradition as the Classic Global Knives, which are likewise made by skilled Japanese craftsmen in Yoshikin's factory in Japan. The handle design is completely new and an ergonomic thumb rest has been added to facilitate the cutting movement. The blades are manufactured with a 3-layer construction using special Cromova 18 Sanso stainless steel sandwiched between two layers of SUS410 stainless steel material. The blades are sharpened to a fine cutting edge to provide superior cutting performance which helps protect the blade from chipping, rusting and staining. The edges of the blade have a hammered surface that creates air pockets, providing better release of the cut food and giving the blade non-stick properties. It is handcrafted in Japan, following the samurai sword tradition, using modern technology and artisan techniques.
